Meatless Mondays: Raw Pasta

4 zucchini, julienned
2 large tomatoes, diced
1/2 c. parsley chopped
1 tsp fresh thyme
1/2 c. fresh basil, chiffoned
2/3 c. olives
1 tbsp olive oil


One tip: keep your noodles and veggies separate until you’re ready to eat or the noodles will get mushy and not have the right texture.

    Drat, I’m at the library without earphones. I’ll watch when I get home. We had crock pot honey lentils with rice and mango salad, which was superb. Here’s the recipe
