Meatless Mondays: Vegetable Hummus Burrito

Time for another recipe.  This week is a super simple, filling burrito.

Ingredients:

1/2 c. sliced mushrooms

1/2 c. sliced red pepper

1/2 small onion, sliced

2 garlic cloves, minced

prepared hummus, at least 1/2 c.

1/4 c. fresh spinach or other leafy green (kale is good)

1/3 can black beans drained and rinsed

2 whole grain  tortillas

salsa or sliced tomatoes (optional)

1/2 avocado (optional)

Directions:

preheat oven to 350 F

water saute the mushrooms, onions, garlic, and pepper until soft (boil about an inch of water in a frying pan and saute)

put the tortillas on a foil lined baking sheet

smear a good amount of hummus on the middle third of each tortilla

that's a good amount

place your spinach or other green on top

place your beans on top of that

add the veggies on top and roll the tortillas, placing the seam down

Cram as much as you can in there

bake for 10 min if you want everything hot and the tortilla a little crisp, or just eat it

place tomatoes or salsa and sliced avocado on top after it’s out of the oven

Look in the back of the fridge for the avocados you know you have, because otherwise you'll be really bitter when you find them the next day

 

I eat two of those myself.  I always have too many veggies to fit in the tortillas, so just eat those on the side.  The hummus gives it a nice creaminess in lieu of cheese.  Use whatever kind of hummus you like.  I’m partial to spinach and artichoke myself.  You could spice this up however you like, maybe add some cilantro on top.  I wanted fast and easy, so no spices.

I saw this recipe somewhere and I can’t remember where, but I think it’s at least adapted from The Engine 2 Diet.

    Delicious! You could roast the veggies in the oven. I’d omit the mushrooms, please and thank you.
