I have decided to get more vegetables into our diet at home.  We’re not getting enough.  Considering I still eat vegan mostly, that may come as a bit of a surprise.  I mean, really, vegans eat a lot of veggies, right?  True, but I’m kind of stuck in a rut and not getting the really good kind.  You know, the dark green leafy kind.  The yucky ones.  And I aim to change that.  Also, the girls definitely need more veggies in their lives. Meatless Mondays: The Pancake Edition

Who doesn’t like pancakes?  They’re easy to make, kids like them, you get to put syrup on them (or whipped cream), and if you make them for dinner like I did last night, your kids don’t think you’re lazy, they think you’re cool.  Win-win. Meatless Mondays: Mediterranean Chili

      Happy Meatless Monday!  We’re making Mediterranean Chili today.  I did another vlog, for fun.  Also, there are outtakes at the end.     Ingredients: 1 Tbsp olive oil 2 zucchini, finely chopped 2 yellow summer squash, finely chopped 1 cup chopped onions 1 pack (12 oz) frozen veggie crumbles 1 pack taco or chili seasoning 2 cans kidney beans rinsed and drained 1 can diced tomatoes 2 c. vegetable broth 1/4 c. red wine vinegar   Directions: Heat oil then sautee the zucchini, squash, and onions until soft.
